Trypsin is an enzyme that the pancreas makes to help break down proteins. In the small intestine, trypsin breaks down proteins. Others call it a proteolytic enzyme or proteinase. Trypsin works with the other two proteinases, chymotrypsin and pepsin, to break down ingested protein into acids and peptides.
