UHT processing is a continuous process that allows high temperature and energy economy or regeneration as the hot fluid heats the incoming liquid. This helps save both cooling and heating costs, and around 90% regeneration efficiency can be achieved. The equipment must be sterilized, especially downstream of the holding tube, before the processing and disinfected and cleaned after the completion of the process.
Generally, the UHT plant is required to be kept running as long as possible. It could be operated on one product type or used to process various products with an effective flushing process between different products and occasionally some intermediate cleansing.
Every UHT process can be divided into a holding section, a cooling unit, and a heating section. Products containing a substantial amount of fat will also require homogenization. Homogenization may occur either between the cooling or heating stages. To ensure that the fat is in its liquid form, homogenization should be performed above 50C (generally between 70 to 80C), facilitating the size reduction process.
