Rennet is a complex set of enzymes produced in the stomach of ruminant mammals. Rennet separates milk into solid curds and liquid whey used in cheese production. In young animal, rennet help to coagulate milk, so it remains in the stomach longer. Rennin converts liquid milk to semisolid similar to cottage cheese. So that it stays in the stomach long enough for proteins to be digested properly; outside of the animal, rennet can be used to coagulate milk in commercial cheese processing. Rennet is the commercial form of rennin, and it is sold as clear amber to dark brown liquid preparation or a white to tan powder or paste. Österreichische Laberzeugung Hundsbichle is the leading supplier of animal rennet to the cheese industry. Positive impact on the global rennet market

During the Covid 19 pandemic, consumption of cheese increased due to the consumers spending more time at home during the pandemic and increased consumption of various recipes with cheese. According to Tetrapak insights in the pandemic, more than one-third (36%) of participants reported that their cheese consumption increased, with just 6% saying it had gone down. The highest reported an increase in consumption of yellow cheese, with 39% globally. Cheese has a 42% share of edible dairy, making it the biggest dairy food in the world. According to Glanbia Nutritionals, one of the cheese manufacturers, cheese sales grew during the pandemic owing to consumers' eating from home and new product launches becoming major trends.
